I also turn to the Hillbilly Housewife for bread machine recipes . What I like best about hers is that she uses a few ingredients as possible. But the bread still turns out delicious. She suggests making a loaf by hand first so that you know what the dough is supposed to look like when the machine kneads it. And she tells how to adjust the water or flour if necessary.

I actually followed her advice. And that is how I find out that I detest making bread by hand. But, she was right. You do need to know if the dough is too wet or dry, otherwise it will not turn out right.
